I love quinoa (pronounced keen-wa). It comes from the Andes region of South America and its origins are truly ancient. It was one of three staple foods of the Inca civilisation, along with potatoes and corn. It was known then as the mother grain and now some people are calling it the "supergrain of the future".
Quinoa contains more protein than any other grain and it is of an unusually high quality. Many people like this dish. I hope you enjoy the great texture and taste of this superb grain.
It is for this reason (and, of course, that it is very delicious) that I have decided to try my hand at a new recipe.
This dish is simple, tasty and uses some excellent free-range chicken from Banfields Butchers on Colombo St. Again I stress that the better the quality of the ingredients the better the dish will taste. Go for it.

Serves 4 1/2 cup quinoa - cooked as directed on packet
1 1/2 cups chicken stock
1 Tbsp olive oil
600g chicken breast
25g rocket leaves
3/4 cup flat-leaf parsley
3/4 cup mint
1/2 red onion, finely sliced
200g cherry tomatoes
1/2 cup pistachio nuts
3 Tbsp lemon juice
3 Tbsp olive oil
Black pepper to taste
Salt to taste
Lemon wedge for garnish
Put the quinoa in a saucepan and cover with chicken stock. Bring to the boil, reduce heat and simmer until the grain is softened to your liking and set aside. I like it to have a little bite as it adds another texture to the dish. Heat 1 Tbsp olive oil in a large fry pan and cook chicken until cooked through and golden on both sides. Set aside to rest. Place the quinoa, rocket, onion, parsley, mint, cherry tomatoes, and pistachio nuts into a bowl and gently combine. Take chicken and slice across the grain then add it to nike air max shoes the bowl. Finally add the lemon juice, olive oil and season with salt and pepper and mix thoroughly until everything is evenly coated. Serve in a large pile in the centre of the plate and garnish with lemon wedges.
